A harmonious marriage of fruit and beer, but still recognisable as a beer. The distinctive aromatics associated with the declared fruit should be noticeable in the aroma. The additional aromatics should blend well with whatever aromatics are appropriate for the declared base beer style. As with aroma, the distinctive flavour character associated with the declared fruit should be noticeable, and may range in intensity from subtle to aggressive. The balance of fruit with the underlying beer is vital.
A tropical punch bowl of a Session IPA, Fruitopolis is bursting with aromas of ripe, fleshy mango, juicy peach, and a touch of pineapple & coconut. The hops make themselves known on the palate adding notes of lychee, melon and a squeeze of sweet orange adding to the mix. A gentle bitterness balances the sweetness of the beer, leading to a clean, fruity and refreshing finish.

During these endless summer days, we have felt especially drawn to recipe-making that champions seasonality. We believed the first sip of Fruitopolis could match the joy of a first bite of late-summer fruit. The recipe we were looking for wouldn’t be a fruited sour, or a cloying smoothie beer. Rather like its sister Citropolis, it would be light and refreshing; enriched by fresh mango and peach to create a beer that would burst at the seams with sweet flavour.
THE RECIPE
We used the malt base Extra Pale, Chit, Corn and Flaked Barley, assured of its ability to showcase hops and allow even subtle aromas to sing. And the fruit: Peach and mango were chosen, steering away from more tropical pineapple and passionfruit. Although we love these flavours and have brewed with them before, we felt this recipe was for the round and succulent stone-fruit aroma of peach and mango.
THE BREW
The challenge this beer would pose was working with fruit, in this case peach and mango. Using fresh fruit puree and juice can cause fermentation issues due to the influx of natural sugars. To avoid this, we added fruit at the beginning of the process, allowing us to guarantee that all the sugars would be fermented out. This process mellows out any aggressive fruit flavour, balancing the beer and keeping it sessionable.

We briefed the Illustrator to adapt the beery city drawn for Citropolis for a bold colour palette. The colours; pink, green and orange complement the surreal city made of peach and mango.
